When it comes to gatherings and parties during the festive period, it can be hard to please everyone. Some guests enjoy a tipple whilst some are tee total, this is also a time that young guest are around, so what do you do? This is one of those perfect cocktails that can please everyone (if they enjoy pineapple, of course)
I made the pineapple purée from one I purchased at the shops, blended it up for lovely fresh juice. When you can, always use fresh ingredients, this just sends the whole flavour profile of your drinks into overdrive, and gives more control.
So, I named this cocktail the Pineapple Le Kera. It’s fast and fun to make. Just omit the rum from the version of the mocktail if required. Here is what you need.
Ingredient list:
- I used Doorly’s XO for the dark rum, but any dark rum you choose will be fine.
- 1 fresh pineapple, I used half of a small 1, and it made 2 cocktails
- Coconut cream. I used cream of coconut Coco Reàl for this
- Sweeter of choice. I used agave, you can use simple syrup
- Juice of 1 fresh lime
- Ice cubes
Prep
- you will need a blender for this one if making fresh pineapple juice. If using ready-made juice, you can put all this in a blender or a shaker.
- Blend your pineapple in blender (peel skin & cut into small chunks)
- I did not strain the pineapple, I want it thick and lush
- Now empty some of your juice so you can continue to use your blender. I need space to add ice cubes, so do accordingly. Now you can add the rest of your ingredients too
Instructions (this makes 2 glasses)
- add your ice cubes to a shaker or blender
- add 45ml of dark rum. I used Doorly’s XO
- 15 ml of fresh lime juice
- generous squeeze of coco real, This is to brighten the pineapple and add a touch of creamy sweetness
- add about 15ml of agave or your sweetener of choice (adjust to your taste)
- now fill with your pineapple juice purée
- Blend or shake till chilled and combined
- give a final taste and see if any ingredients need more added
- get your choice of glassware, I used coupe style
- you can add more ice to the glass if needed and place a lime wheel for decor (optional) You can also rim the glass with the lime, which I also like. Cheers
This is wonderful with and without the rum. The rum just gives it that delightful kick of Barbados tropicness. Juicy, sweet and pleasant on the eye and taste buds. Enjoy.
