The most amazing Notting Hill Carnival is in its 60th anniversary, can you believe! There will be around a staggering two million people visiting this part of west London for the carnival this weekend from all around the world no doubt as well as the locals.
It is Europe’s largest street festival and the second-largest carnival in the world, surpassed only by Rio de Janeiro’s Carnival in Brazil.
Rum punch has always been the drink of choice. The great thing about punch like this is, you can not only omit the rum if you want to share with non-drinkers or under 18s, you can also freeze them, they make great rum popsicles if the weather is heatin up like it has been lately here in the UK.
In the Caribbean there is a 1, 2 , 3 , 4 measure rule when doing punch (because we na do no measurements!) As followed
1 measure of Sour (lime or lemon)
2 measures of Sweet (Strawberry syrup, sugar or fruit)
3 measures of Strong (Rum)
4 measures Weak (Fruit juice or fizzy pop)

Ginger spice it up punch
- fresh lime, lemon
Mixed spice and pineapple pieces
Wray and nephew rum (of course!) and coconut rum or Angostura bitters (1.5 measures each)
Ginger beer or ginger ale to top it up
Served with ice and garnished with blueberries and limes, enjoy!
