Well now, I received this delightful bottle of award-winning Worthy Park 109 at this year’s UK Rumfest. Boy does it pack a funky punch! Strong, yet full of flavour, I needed something that would let the rum and cocktail ingredients shine together, so this was a creamy spin on a jungle bird recipe. It has layers of flavour, creamy at the top, as you sip your way down it gets to the rum kick from the 109. So adjust your straw height to taste the different flavours.
This cocktail not only tastes great but looks delightful and extremely inviting. So perfect for celebrations and festive gatherings. It will certainly brighten up the place once you and your guests get sipping. You can also omit the rum in this recipe and use as a tasty mocktail for non-drinkers and youngers. They will certainly love the creamy topping.
This makes 1 glass, so adjust to how many you need. I made some fresh mango ice cream, which went perfect with this. You can choose an ice cream of your liking. A coconut, strawberry or banana are some that would work. I also made fresh pineapple juice and did not straight to get a lovely thick creamy texture.
You will need: Blender if making fresh pineapple juice. Cocktail shaker & highball or glass wear of your choice.
Ingredients:
- 45ml dark rum of your choice. I am using Worthy Parl 109
- 20ml Campari
- 15ml honey or sweetener of your choice
- 45ml pineapple juice (I made fresh and did not straight)
- 15ml fresh lime juice
- ice medium size
- big generous scoop of ice cream, I used fresh homemade mango
- garnish, 2 pineapple leaves and fresh pineapple slice (optional)
- straw
Method
- add ice to fill shaker
- add all ingredients (except rum if making a mocktail version)
- shake till ingredients are chilled
- Strain into a glass filled with ice (leave some room at top for ice cream)
- add your sightly melted ice cream scoop to glass
- garnish with your chosen leaves and sliced fruit of choice
- wack in a straw and enjoy this tropical joy in a glass!
