No one likes to have their rum stolen, but what do you do when it’s an angel or a duppy doing the stealing!! Let us explain to you what the angel or duppy share is.
To get a wonderful tasting rum, the liquid is typically aged in barrels where it undergoes a transformative and maturing process. Tropical ageing in rum is a distinctive maturation process that occurs in those tropical climate destinations such as the Caribbean or Jamaica (tastes even better when sipping your rum there too!)
These higher temperatures cause the liquid or “spirit” to expand and contract in the barrel more rapidly, but the payoff is a more flavoursome profile with rich, dark notes & characters. Compare that to whiskey if aged in Scotland, the evaporation rate is 3 times less.
So this evaporation of rum from the barrel in hotter climates is fondly known as the angel’s share or duppy share. In Scotland whiskey aged in oak barrels tend to lose about 2% liquid through evaporation through the porous wood compared to Jamaica, rum in oak barrels tend to lose 4-6% due to those rum loving duppies!
Not only is the liquid lost in the higher climets, but the trade-off is you get a higher ABV. So there you have it folks the supernatural realm of angels has spoken, and they much prefer rum to whiskey! Can’t say we blame them, Cheers.
