I’m not sure if they still sell those frozen ice polls from my childhood (if you know, you know) but I used to love them on a super hot sunny day. Now in adulthood the mood for something sweet and chilled still hits. If you have never tried a frozen strawberry Daiquiri then my friend you are in for a mixture of childhood slush puppy memories but with the adult addition of RUM=YUM
This is much more flavoursome if you make it yourself with fresh ingredients and requires little effort, so roll up those sleeves & let’s get blending.
The frozen daiquiri recipe
This just may be one of your top summer go to cocktails.
Ingredients
– 1 1/2 or 2 cups fresh strawberries (depends on size) hulled and sliced
– 1 cup simple syrup (equal parts water and granulated sugar, dissolved) easy to make or buy ahead
– 2 ounces light rum, ooooh what to choose (possibly go for a Cuban rum & trace its origins)
– 2 ounces freshly squeezed lime juice (roll your limes first to extract more juice)
– Ice cubes
– Lime wedges for citrus burst to garnish (optional)
Instructions
1. In a blender, combine sliced strawberries, simple syrup, and light rum of your choice. Blend until smooth but still icy.
2. Add freshly squeezed lime juice TIP roll your limes and extract the juice (remove seeds) and blend until well combined.
3. Pour the mixture into glasses filled with ice. TIP you can also pre-chill the glass, just make sure it does not smash in the freezer if left too long, yes it happened to me!)
4. Stir gently to combine ice and mixture to make even more icy.
5. Garnish with a lime wedge.
There you have it. Fast, simple, juicy, refreshing. Serve right away & enjoy.
